As a dessert lover, I can’t tell you how many times I have made a batch of cupcakes, tasted the batter and frosting, then turned around and blended myself a nice healthy green smoothie to drink while shooting photos of my cupcakes for the blog. Granted, I will probably eat that same batch of delicious cupcakes over the next three days, but to say that I eat like that all the time would be untruthful! The truth is, I struggle with balancing my baked goods and healthy foods daily. One way I maintain “the balance” is with this recipe for my daily green smoothie. During the week, I usually blend up one of these delicious and healthful green smoothies sometimes once a day. It makes me feel better about eating dessert daily!

My Daily Green Smoothie
Serves 1
8 oz coconut water or 8 oz cooled green tea
2 cups organic spinach washed
1 tablespoon coconut oil
1 tablespoon organic blueberries
1 tbs chia seeds
bee pollen- use as directed
1 tbs raw agave- optional
Directions
Add all ingredients to blender and blend until smooth. Serve in a tall glass, with a straw, and enjoy!
Coconut water
Coconut water is rich in electrolytes and can aid in hydration
Coconut Oil
Rich in poly-phenols and is a "healthy" fat
Organic Blueberries
Considered a superfood because they are high in antioxidants. They’re also low in calories and add vitamin C, vitamin E and fiber to your daily diet.
Spinach
Low in calories and high in vitamins, spinach is one of the most nutrient-dense foods in existence. One cup of the leafy green vegetable contains far more than your daily requirements of vitamin K and vitamin A, almost all the manganese and folate your body needs and nearly 40 percent of your magnesium requirement. It is an excellent source of more than 20 different measurable nutrients, including dietary fiber, calcium and protein. And yet, 1 cup has only 40 calories! Spinach is an excellent choice for nutrition without high calories.
Chia Seeds
Great source of both Omega-3 and dietary fiber.
Bee Pollen
Bee pollen is full of vitamins, minerals, protein, carbohydrates and the 10 essential amino acids that adults need.

I tried this green smoothie and it was great! I cut the calories by using plain water and added a touch of honey and raw cacao. Yummy!
