Now that spring has officially arrived and we’ve had glimpses of sunny weather, I am dying to throw open the windows and spend time entertaining outdoors! When it comes to warm weather entertaining, one of my favorite desserts to serve guests is a round of made-to-order ice cream sodas. Rich, creamy and delightfully bubbly old-fashioned ice cream sodas served in tall glasses, with fun and festive Shop Sweet Lulu straws, are always a crowd pleaser and sure make you feel like a kid again. Now these fun and whimsical straws can by yours, here’s how…

For my Ice Cream Soda RECIPE…
Ice Cream Sodas- Adapted from Barefoot Contessa
Ingredients
Raspberry Syrup
Strawberry Syrup
Chocolate Syrup
Heavy cream
Club soda
A variety of your favorite ice cream flavors: I used vanilla & coffee but you could also offer chocolate or strawberry!
Directions
1. Ask your guests to chose their flavor of syrup and flavor of ice cream.
2. Pour 3 tablespoons of syrup plus 3 tablespoons heavy cream in a tall ice cream soda glass.
3. Stir with a long spoon, and then slowly, while still whisking, add the club soda until the glass is three-quarters full.
4. Add 2 scoops of ice cream, add soda to the top of the glass, and serve with a spoon and a long straw. (Striped straws from Shop Sweet Lulu)
Enjoy!
Chocolate Syrup:
3/4 cup cocoa powder
Pinch of kosher salt
1 1/2 cups sugar
1 Tablespoon vanilla extract
1 cup brewed coffee
1. Combine the cocoa, salt, sugar and coffee in a medium saucepan and bring to a boil.
2. Reduce to a simmer for cook 5 minutes.
3. Pour the syrup into a bowl and add the vanilla.
4. Cover and refrigerate until ready to use.
Raspberry or Strawberry Syrup:
1 pint fresh raspberries chopped or 2 cups strawberries chopped
1/2 cup sugar
Juice of 1 lemon
1. Combine the berries, sugar, and lemon in a container.
2. Stir to combine.
3. Cover and refrigerate for at least 2 hours, or overnight.
4. Strain the syrup into a pitcher through a fine mesh sieve, pushing down on the berries to extract all the liquid.
