Irish Stout Brownies

In honor of St. Patrick’s Day (and good Irish beer), I thought I would share a recipe for Stout Brownies, sure to knock your Irish socks off! I first spotted this recipe on Jess’s blog Forgiving Martha and couldn’t wait to try them out for myself. I’ve always liked the taste of beer, most likely as a result of my Dad who drinks “fancy beer” as he calls it. I have, on many occasions, sat drinking a good stout or porter with him learning to appreciate the thick and bitter tastes. In this recipe, Irish Stout adds a complex flavor, making this fudgy chocolate brownie over the top! Adorn them with a simple cutout clover on a party stick and you’ll be feeling the Irish spirit in no time…green beer definitely not needed.

Irish Stout Brownies – recipe by Bon Appetit

1 cup Irish Stout Beer (Such as Guinness or Murphy’s)
16 ounces semisweet or bittersweet chocolate, chopped, divided
1 cup plus 2 tablespoons (2 1/4 sticks) unsalted butter
1 1/2 cups sugar
3 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1 1/2 teaspoons kosher salt, divided

Directions

Preheat oven to 350°. Line a 9x9x2″ metal baking pan with foil, leaving a 2″ overhang. Bring stout to a boil in a medium sauce- pan; cook until reduced to 1/2 cup, about 12 minutes. Let cool. Reserve 1/4 cup stout.
Stir 12 oz. chocolate and 1 cup butter in a medium metal bowl set over a saucepan of simmering water until melted and smooth. Whisk sugar, eggs, and vanilla in a large bowl to blend. Gradually whisk in chocolate mixture, then 1/4 cup stout from pan. Fold in flour and 1 1/4 tsp. salt. Pour batter into prepared pan.
Bake brownies until surface begins to crack and a tester inserted into center comes out with a few moist crumbs attached, 35–40 minutes. Transfer pan to a wire rack and let cool for at least 20 minutes. Stir remaining 4 oz. chocolate in a medium metal bowl set over a sauce-pan of simmering water until melted and smooth. Add reserved 1/4 cup reduced stout, remaining 2 Tbsp. butter, and 1/4 tsp. salt; whisk until well blended.
Pour warm glaze over brownies spreading evenly with spatula. Let stand at room temperature until glaze is set, about 40 minutes. * Can be made 8 hours ahead. Cover and let stand at room temperature.
Using foil overhang, lift brownie from pan; cut into squares.

 

Clover Topper:
Cut a 1″x1″ four leaf clover out of green paper. Glue one side of the clover to a party stick and let dry. Stick clover picks into center of brownies and serve.

    I’ve never had Irish Stout before, but I definitely like Guinness so I’m thinking I might enjoy it…any excuse to make those brownies! They look so fudgy and delicious.

    I always wanted to be a beer drinker but could never take to it. I think if it was in brownies that might just be the way to start :D

      Nic- this would be the perfect recipe for you then. The beer flavor is subtle but adds a rich flavor to the chocolate! You must give it a try. :)

    these look heavenly! I’ve made a chocolate guinness cake before which was pretty tasty; I think the heavy stout/beer that makes the cake soooo moist and rich.

    These look delicious!

    One thing Im wondering… I have brownie mix at home. If I bought the beer could I replace that with the water ? Would I need to keep the oil and the egg? (the box says 1/2 cup oil, 1/4 water and 2 eggs

      Hi Erin, I am not sure how that would work but I am guessing it would be fine. Just make sure you reduce the beer like the recipe states and use 1/4 cup of that reduced beer to substitute in place of the water. However, if you get the chance I really recommend trying this recipe from scratch! It is easy and worth the extra work. :)
