Last week my oven broke. (Insert long moment of silence while you feel my pain)
At this point in the story I feel compelled to mention that if you consider yourself a food snob, kindly avert your eyes. Today my friends, I’m sharing a recipe which requires Jell-O. You know the no bake, brightly colored, jiggly wonder that we all have memories of eating as children?
Luckily for me, a good friend brought the most delicious Jell-O trifle to our 4th of July bbq and the memory of its flavor still lingers on my taste buds. This trifle I speak of was alternating layers of blueberry Jell-O, whipped cream, and raspberry Jell-O piled high and strongly resembling something from a Dr. Seuse storybook. We all giggled a little as the Jell-O trifle was paraded in, wiggling and shining. I thought to myself; it’s just Jell-O and whipped cream, am I missing something, how great can that be? Oh, I had little faith until I took the first bite. Who knew that homemade whipped cream mixed with fruity Jell-O was magical stuff!

So with a broken oven and the summer heat beating down on our non-air conditioned condo, I made Raspberry Jell-O Parfaits with Sautéed Peaches. As the great Dr. Seuss once said, “If you never did you should. These things are fun and fun is good.”
Raspberry Jell-O Parfait
makes 6-8 depending on size
Raspberry Jell-O
1. Prepare Jell-O as directed on the box. Dice into small cubes and set aside.
Sauteed Peaches- optional
2 tablespoons sugar
4 large ripe peaches, pitted and diced
2. Set aside in fridge to cool completely.
Whipped Cream- substituting a pre-made product is not an option.
1 Cup heavy whipping cream
2 Tablespoons confectioners sugar
1. In the bowl of an electric mixer fitted with the whisk attachment, whip cream until peaks are just about to form. Beat in sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like. Set aside.
Assembly
This recipe can be assembled as one large trifle in a glass trifle bowl or as individual servings in tall glasses.
1. Layer ingredients starting with jello cubes on the bottom followed by whipped cream, then peaches. Repeat ending with whipped cream on top.
2. Serve with a long spoon and enjoy!
