What would St. Patrick’s Day be without a dinner of corned beef, potatoes, and cabbage? Much like turkey for Thanksgiving, the best part of a corned beef dinner is the leftovers the next day. Since we’re total fatties (and absolutely love corned beef and cabbage), we jumped the gun on making St. Patrick’s Day dinner last night and with the leftovers, I made a variation of this sandwich for lunch today and it was DELICIOUS! Thanks for sharing the recipe
