Homemade Fudgesicles

During summers at a kid, I would ever so rarely, open up the freezer to find a box of Fudgesicles stashed between the frozen peas and carrots. It was always a special treat and one that never lasted long in our house. It’s that nostalgic memory of creamy, chocolately, fudge pops that had me jumping for joy at finding a recipe for this homemade version in the latest issue of Everyday Food. People, listen up…you haven’t tasted a fudge pop until you sink your teeth into one of these. Sweet-decadent-heaven-on-a-stick; that’s their new name.

Fudge Bars- Everyday Food Magazine
makes 10

2 teaspoons cornstarch
1 1/2 cups whole milk, divided
1 1/3 cups heavy cream
1/2 cup sugar
1/2 cup unsweetened cocoa powder
1/4 teaspoon fine salt
2 teaspoons pure vanilla extract

1. In a medium saucepan, whisk together cornstarch and 2 tablespoons milk until smooth; whisk in remaining milk, cream, sugar, cocoa, and salt. Bring to a boil over medium-high, stirring constantly, and cook 1 minute.

2. Transfer to a large liquid measuring cup and stir in vanilla. Let cool slightly before pouring into ten 3-ounce popsicle molds. Freeze slightly (about 30 minutes) then remove and insert popsicle sticks. Freeze a until pops are solid, about 6 hours. Just before serving, briefly run molds under hot water to release pops.

    My grandkids would love to find these in the freezer next time they come. What popsickel maker did you use?

      Hi Jan, I use a Frozen Ice Pop Maker by Norpro. I bought it at a hardware store!

    Oh my gosh! I loveeeee fudgesicles. They were a staple in our freezer growing up too. These look perfect!

    I’ve made a similar version from Smitten Kitchen, and they turned out so well. I’ll have to try these next! I was never a fan of the store bought variety, but homemade fudgesicles have converted me.

    Can I ask where you bought your moulds – is it somewhere online? Hard to find this style in Australia.
