One of my favorite memories from grade school is receiving candy grams on Valentines Day. They were little paper Valentines cards attached to a piece of candy or box of conversation hearts; handed out by friends and classmates. I even remember receiving one addressed from a "secret admirer", which of course made me completely giddy.
This year I'm making cookie grams inspired by grade school memories featuring one of my all time favorite cookies; the Snickerdoodle. Snickerdoodles are whimsically named sugar cookies rolled in a cinnamon sugar crust. They taste like Mexican Horchata but have the buttery, chewy and slightly crisp texture of the perfect sugar cookie. Not only are they easy to make, at the end of baking your house will smell like cinnamon and you will be left with two dozen perfect cookies ready for Valentines Day. Top a stack of Snickerdoodles with a cut out heart, wrap it with a piece of kitchen twine and you've got yourself one tasty cookie gram. I guarantee the recipient will feel the love.
Snickerdoodles
Makes 24 cookies
1 cup butter at room temperature
1 ½ cups sugar
2 large eggs
2 ¾ cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
3 tablespoons sugar
3 teaspoons cinnamon
Directions
Preheat oven to 400°F. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and 1 ½ cups sugar. Add eggs one at a time and mix until combined scraping down sides of the bowl. In a seperate bowl whisk together flour, cream of tartar, baking soda and salt. Blend dry ingredients into butter mixture mixing just until combined. Chill dough for 1 hour in the fridge. Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl and set aside. When dough is chilled, scoop out 1 inch balls using a spoon or cookie scoop (I use this scoop). Using your hands roll them into balls and roll them one at a time in the cinnamon & sugar mixture. Place on ungreased cookie sheet lined with parchment or silicone mat, and bake 10 minutes. Remove from oven and let cool 2-3 minutes on cookie sheet before removing to cooling rack.
Cookie Gram DIY
1. Cut small 2x3" hearts out of colored paper.
2. Stack 4 (fully cooled) cookies and place one heart on top.
3. Wrap up with a piece of kitchen twine and tie in a bow.
4. Deliver to loved ones.
