    Roasted Beet Hummus

    After the last week of preparing for Valentine's Day, baking sweet treats and snacking on candy, I was more than ready for a healthy (and savory) snack. Along came roasted beet hummus. Vibrantly colorful, packed with flavor and pretty good for you too!

    Roasted Beet Hummus
    makes about 2 ½ cups

    3 large beets, scrubbed clean, roasted, peeled, and cubed
    1 15oz can garbanzo beans rinsed and drained
    6 tablespoon tahini sauce (I use Trader Joes)
    5 tablespoon lemon juice
    2 small clove garlic, chopped
    2 teaspoon ground cumin
    1 tablespoon lemon zest
    Sea salt to taste
    Fresh ground pepper to taste
    2 tablespoon olive oil

    Wrap the beets in foil and roast at 350ºF for an hour, or until fork tender. Cool, peel and dice into cubes. Place all ingredients except for the olive oil into the bowl of a food processor and purée, pouring the olive oil in through the feed tube as it blends, until smooth. Taste and adjust seasoning (salt, pepper, lemon juice, cumin) as you need to.

    Serve immediately or refrigerate for up to 4 days before serving. Makes about 2 ½ cups. * Drizzle with olive oil and serve with whole wheat pita bread.

      This is so funny that you should post about this....I have been seeing beets EVERYWHERE lately. I even tried an ice cream made from them last week. Just in case you are wondering how it tasted....just like you think. Milky beets. 🙂
