    Roasted Acorn Squash with Mascarpone

    Americans need to learn how to vacation. There, I said it! My good friend Jacquelyn (who lives in Toronto Canada) and I have discussed this topic in length as she is currently taking a two week vacation in South Africa. Why is it that American's can barely get away for a long weekend let alone plan a two week holiday? Sadly, I blame it on our work culture. It's simply unheard of to take that much time off without significant struggle in the workplace. And even now that I own my own business without vacation days to cash in or a boss to answer to, I still have trouble getting away.

    Jacquelyn says that taking vacations are simply non-negotiable in her family. It's something they plan, and something they do. I love that! If only I could make vacationing, and I mean really vacationing non-negotiable. Maybe I will have to revise my New Year's Resolutions just a bit. But before we all get to down on ourselves for not being on a two week holiday, I recommend you hop on over to Lark & Linen and get my recipe for Roasted Acorn Squash with Mascarpone & Balsamic.       i agree! personally, i'm pretty good at taking vacations (ha), BUT even when i do, i bring a laptop and have to work on freelance stuff outside of the usual 8-5 work. it's addicting.

      and i don't think i've ever had acorn squash + mascarpone -- looks so interesting and delicious!

        I'm the same way! "vacation" to me is just sitting in a hotel room or some other location and working from my laptop. It's ridiculous. I really need to work on it! Hope you try the acorn squash...it's divine.

      That looks so delicious! I am definitely going to try that. Mascarpone with anything will do a girl good (maybe not her waist, but something else non-Americans do better is portion control!). Thanks for sharing! xo

        I agree! If you go easy on the Mascarpone this is actually a pretty healthy dish. Although the Mascarpone is heavenly. 😉

      This looks SO good! And yes, plan a vacation! I am terrible about taking time away from work, but just booked a one month holiday to Thailand in the spring! (This is after hoarding my vacation time for the past 4 years).

      So trying to be better about taking vacations, but when I do, it's a vacation! This looks so amazing. We have been eating a lot of squash this winter and this looks like an amazing twist!
