    Watermelon Radish Salad

    Have you ever tried watermelon radishes? They're milder and prettier than regular radishes, and winter is a good time to find them. Check out your local farmers' markets or organic grocery stores to root them out (har har) – this Watermelon Radish Salad would be the perfect complement to a Valentine's dinner at home! That's what my husband Ryan and I traditionally do in order to avoid the hustle and bustle outside. - Ann Watermelon-Radish-Salad

    Watermelon Radish Salad
    Serves 4

    1 shallot, finely diced
    1 ½ tablespoon fresh lemon juice (plus more if needed)
    1 ½ tablespoon white wine vinegar
    Maldon salt to taste
    1 avocado, pitted and diced
    ¼ cup extra virgin olive oil
    2 heads romaine lettuce, cut into ½-inch pieces while reserving some small pretty leaves
    1 watermelon radish, thinly sliced

     Directions:
    1. Whisk together the first four ingredients in a small bowl to make the dressing.
    2. Assemble the rest of the ingredients in a salad bowl.
    3. Toss dressing with salad, and serve immediately.

      Ann did such a beautiful job on this illustration and the salad sounds delicious! I'll keep my eye out for watermelon radishes, I've never had one.
