    Craving: Apricot-Chocolate Chip Cookies

    It may be Tuesday but I am still in recovery mode from a long weekend filled with two family Easter celebrations, a trip to MOCA's "Art in the Streets" exhibit {photos posting this week} and LOTS of good food! As always, I was in charge of  bringing the baked goods to Easter dinner so I made these Cadbury Creme Cupcakes, a double layered Carrot Cake, and a batch of Apricot-Chocolate Chip cookies. The addition of the tart and chewy apricot bits make these cookies a new favorite!

    Apricot-Chocolate Chip Cookies

    2 ¼ cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon salt
    1 ½ sticks butter, softened
    ¾ cup granulated sugar
    ¾ cup packed brown sugar
    1 teaspoon vanilla extract
    2 large eggs
    2 cups (12-oz. pkg.) chocolate chips
    1 cup roughly chopped dried apricots

    Preheat oven to 375° F.

    Mix flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips and apricots by hand. Drop by rounded tablespoon onto ungreased baking sheets.

    Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

      That carrot cake was out of this world! I'm so mad though, I forgot to bring some of those cookies home with me! I didn't even get to try them 🙁

      yum i don't think i've ever tried apricot and chocolate chip cookies. sounds good though. I like going to MOCA. haven't been in a while since im in china 🙂 enjoying your blog.
