    {Cocktail Friday} Prickly Pear Mezcal Mule

    Who knew Moscow Mules were so popular? Well, honestly...I sort of did after taking a sip and falling in love with the drink myself. So, it doesn't surprise me that when I shared the recipe in my last {Cocktail Friday} post, you all loved it as much as I do! Give the people what they want! (Chants the little voice in my head). So here's another 'Mule' for you. A Prickly Pear Mezcal Mule to be exact! Hot pink color, prickly pear flavor, ginger beer, and a kick of jalapeño...I am determined to make this recipe pronto.     Prickly Pear Moscow Mule

    Makes: 2 drinks

    Ingredients:

    2 oz lime juice
    ½  jalapeño
    2 oz Mezcal
    6 oz ginger beer
    1 oz. prickly pear syrup
    Lime, for rimming the glass
    Salt, for rimming the glass
    Jalapeño slices (seeded), for garnish 

    Instructions:

    1. Sprinkle salt on a plate and set aside. Run a cut lime along the rim of the glasess. Dip the rim in the salt covered plate. Set the glasses aside.
    2. Muddle the lime juice and jalapeño at the bottom of a shaker until well combined.
    3. Add the Mezcal, a few cubes of ice and the prickly pear syrup. Shake vigorously until well combined.
    3. Pour the mixture evenly into the two glasses.
    4. Pour the ginger beer into the glasses until the drink reaches the top of the glass. Stir.
    5. Garnish the drink with a few jalapeño slices for added bite.

    Freutcake Note: What in the world is prickly pear syrup?! I didn't know either so here you go:

      Guuuuuurl! I'm obsessed with Mezcal, but I've never met another person who can appreciate it. Everyone I share it with, simply isn't into it–too smokey is usually the complaint. Last weekend I was playing bartender with friends and made a Mezcal Mule (which I thought was very clever of me) with rosemary simple syrup, cucumber infused Mezcal and ginger beer. It.was.amazing.....except no one else thought so!! I'm so glad I've found another Mezcal aficionado! I'll have to give this prickly pear syrup a whirl.

      p.s. ironically, my entire blog post is about making simple syrups today 🙂
