    Homemade Fudgesicles

    During summers at a kid, I would ever so rarely, open up the freezer to find a box of Fudgesicles stashed between the frozen peas and carrots. It was always a special treat and one that never lasted long in our house. It's that nostalgic memory of creamy, chocolately, fudge pops that had me jumping for joy at finding a recipe for this homemade version in the latest issue of Everyday Food. People, listen up...you haven't tasted a fudge pop until you sink your teeth into one of these. Sweet-decadent-heaven-on-a-stick; that's their new name.

    Fudge Bars- Everyday Food Magazine
    makes 10

    2 teaspoons cornstarch
    1 ½ cups whole milk, divided
    1 ⅓ cups heavy cream
    ½ cup sugar
    ½ cup unsweetened cocoa powder
    ¼ teaspoon fine salt
    2 teaspoons pure vanilla extract

    1. In a medium saucepan, whisk together cornstarch and 2 tablespoons milk until smooth; whisk in remaining milk, cream, sugar, cocoa, and salt. Bring to a boil over medium-high, stirring constantly, and cook 1 minute.

    2. Transfer to a large liquid measuring cup and stir in vanilla. Let cool slightly before pouring into ten 3-ounce popsicle molds. Freeze slightly (about 30 minutes) then remove and insert popsicle sticks. Freeze a until pops are solid, about 6 hours. Just before serving, briefly run molds under hot water to release pops.

        Hi Jan, I use a Frozen Ice Pop Maker by Norpro. I bought it at a hardware store!

      I've made a similar version from Smitten Kitchen, and they turned out so well. I'll have to try these next! I was never a fan of the store bought variety, but homemade fudgesicles have converted me.
