When I was a little girl I used to say that was supposed to be born a mermaid. During the summers I would let myself sink to the bottom of the swimming pool, legs glued together and swim mermaid-style along the bottom searching for pearls. On dry land I would eat as much seafood as I was allowed to. To this day I still love fish and shellfish of all kinds.
One of my favorite summer dishes to make is an orzo salad with lots of fresh herbs, cucumber and feta cheese topped with roasted shrimp. Serve that up with a cold glass of white wine and I am in grown-up mermaid heaven.
Usually I buy fresh shrimp and take the time to clean and devein them, not my favorite thing to do in the kitchen. This time I tried Bumble Bee SuperFresh™ Lemon Shrimp with Garlic & Herbs instead.
I have to admit that I was a wee-bit skeptical of trying frozen shrimp. I literally NEVER buy frozen food aside from the obligatory frozen fruits and veggies I keep on hand and certainly never frozen meals. The shrimp was super quick to make, 6 minutes total, and tasted ridiculously delicious on top of my favorite orzo salad. But really, how bad could shrimp with garlic and butter be?

If you are a seafood lover like me, I hope you will try my recipe! No one has to know how easy it was to make.
Lemon Shrimp with Garlic, Herbs & Orzo Salad
1 package of Bumble Bee SuperFresh™ Lemon Shrimp with Garlic & Herbs
¾-pound orzo pasta
Extra virgin olive oil
½ cup freshly squeezed lemon juice
Sea Salt & Pepper
1 cup minced scallions, white and green parts
1 cup chopped fresh dill
1 cup chopped fresh flat-leaf parsley
1 cucumber, unpeeled, seeded, and diced
½ large shallot minced
½ cup crumbled feta cheese
Directions:
1. Fill a large pot with water, add a sprinkle of sea salt and bring to a boil. Add the orzo and boil for 9 minutes, stirring occasionally, until it's cooked al dente. Drain and pour into a large bowl. Whisk together the lemon juice, ½ cup olive oil, 2 teaspoons salt and 1 teaspoon of pepper. Pour over the hot pasta and stir well. Set aside.
2. Prepare the Bumble Bee SuperFresh™ Lemon Shrimp with Garlic & Herbs according to the package instructions.
3. Once the orzo has cooled slightly add the scallions, dill, parsley, cucumber and shallot. Toss well. Sprinkle with the feta and stir carefully.
4. Top orzo with shrimp and serve at room temperature.

This sounds delicious! I can practically taste it now... I've only done the de-veining once and it took way longer than expected, so now I usually stick to frozen because it's faster. I blame "hangry" tendencies.

Oh my goodness, I can completely relate to your mermaid obsession. I loved putting on a pair of goggles and exploring the bottom of the pool, lake, or whatever body of water I was in (even the bathtub!). This shrimp and orzo salad looks like the perfect grown-up mermaid meal!
