Happy Friday! Yesterday I invited a girlfriend over for a glass of wine since I just happened to have a bottled of chilled white wine in my refrigerator that had been softly calling my name all day. Shortly after, I realized how little I had in my house to offer as an appetizer. Wine without food is no fun at all!
What I did have on hand were the ingredients to make a batch of these quick and tasty zucchini bites; so I whipped up a batch. Grated zucchini, cheese and egg...how can a girl go wrong? They turned out delicious and naturally I snapped a few pictures of them before my friend arrived!

Mini Zucchini Bites- adapted from this recipe
Makes 24 mini-muffin sized bites
2 cups grated zucchini
2 eggs, lightly beaten
1 large shallot finely chopped
½ cup shredded cheddar cheese
½ cup Italian bread crumbs
Shaved parmesan cheese
salt & pepper
1. Preheat the oven to 400ºF. Butter a mini-muffin tin, set aside.
2. In a large bowl add two eggs and beat lightly with a whisk. Then, add the zucchini, shallot, cheddar, and bread crumbs and combine them with a wooden spoon. Season with a pinch of salt and pepper.
3. Using your hands or an ice-cream scoop, fill each muffin cup just to the top. Bake for 15-18 minutes or until the top is browned and set.
4. Allow to cool and top with shaved parmesan cheese. Serve immediately.
