Ingredients in a Cranberry Campari Spritz
- Campari
- Vanilla simple syrup -You can buy store bought vanilla syrup or make it yourself. My recipe is in this post for Vanilla Bean Old Fashioned.
- Cranberry juice - unsweetened is what I prefer to use because we are adding simple syrup.
- Prosecco - or champagne, whatever you prefer.

How to Make a Cranberry Campari Spritz
- Fill a cocktail shaker:
Start by filling a cocktail shaker with ice. You can skip shaking this drink but I prefer it well chilled. - Add the cranberry and Campari:
Pour in the cranberry juice, Campari, and simple syrup. Shake until chilled and combined. - Strain:
Strain cocktail into coupe glass.
- Top with bubbles:
Add the Prosecco for that festive fizz. Be careful not to stir too vigorously—you want to keep those bubbles intact! - Garnish like a pro:
Garnish with a sprig of fresh or sugared rosemary and a couple of cranberries. The garnish adds a festive touch and an extra layer of aroma.

How to Make Sugared Cranberries & Rosemary
- Start by washing and drying your cranberries or whatever garnish you are using. They need to be completely dry.
- Coat the garnish in simple syrup, homemade or store bought and give them a good toss to completely coat.
- Strain off the extra simple syrup.
- Toss or roll, or sprinkle in granulated sugar. For cranberries I find it’s easier to roll them. With rosemary I sprinkle the leaves with sugar.
- Allow the garnish to dry completely to harden up before using as garnish.

Ingredients
- 1 ½ oz Campari
- ½ -¾ oz vanilla simple syrup (recipe in blog post)
- 2 oz cranberry juice
- 3 oz prosecco or champagne
Instructions
- In a cocktail shaker filled with ice combine Campari, simple syrup and cranberry juice. Shake to chill.
- Strain into champagne coupe and top with chilled Prosecco.
- Garnish with sugared cranberries on a cocktail pick and a sprig of rosemary.
