Have you ever heard of a Chichi? It's basically a piña colada made with vodka and it's a great tropical cocktail if you aren't a rum drinker.
Last week I FINALLY made myself a hair appointment. I was long overdue for a trim and it's always fun to catch up with my hair stylist Jean. She's been doing my hair off and on since college, back in the days when I never had fancy booze like vodka or rum in my house and certainly didn't blend up mixed drinks!
Chichi Cocktails
It happened to be National Piña Colada day which sparked the conversation of Chichis. Never in my life have I heard of a chichi but they sounded right up my alley! Cream of coconut, pineapple juice and vodka, blended with ice until creamy or (if Jean is making them) shaken in a cocktail shaker with ice and strained. Naturally, I HAD to try them.
Chichi Cocktail vs Pina Colada
Lighter in flavor than a piña colada, this drink is definitely a new favorite of mine! Short on time or just not interested in cleaning your blender? (I'm with ya) Add all of the ingredients to a cocktail shaker filled with ice and shake until foamy and cold. Pour over fresh ice and serve. It's a creamy, dreamy drink served shaken as well.
Note: I use Coco Real brand Cream of Coconut. It's a sweetened cream of coconut made specifically for cocktails and you can find it in most grocery stores!
