If you're looking for a fun and festive cocktail for St. Patrick’s Day, this Pistachio Martini is the perfect drink to shake up. Creamy, slightly nutty, and topped with a sweet honey-pistachio rim, this cocktail tastes like a decadent dessert in a glass. Its soft green color makes it especially perfect for celebrating the holiday, but honestly, it's delicious enough to enjoy all year long.
Pistachio Martini
Last year my friend's Ruthie and Samantha hosted the most adorable St. Patrick’s Day girls’ night with a Lucky Charms theme. Instead of the cereal (although honestly that would have been fun too), we spent the evening making charm bracelets and necklaces, sharing potluck appetizers and desserts, and sipping festive cocktails together.
Alongside bright green mimosas, my friend Ruthie mixed up a batch of creamy pistachio martinis for dessert that were absolutely to die for. One sip and I immediately asked her for the recipe. Thankfully she shared it with me later so I could recreate it at home and now I’m sharing it here so you can make it too.
The honey-dipped pistachio rim makes the drink feel extra special and gives every sip a little sweet crunch and extra pistachio flavor. It’s the kind of cocktail that feels perfect for a girls’ night, a St. Patrick’s Day party, or any time you want something a little indulgent.

How to Make a Pistachio Martini
Prepare the pistachio rim
- Place the pistachios in a food processor and pulse until they become a fine chop or powder.
- Pour honey onto a small plate. Dip the rim of a martini glass into the honey, then gently press it into the crushed pistachios until the rim is coated. Set the glass aside.
Make the cocktail
- Fill a cocktail shaker with ice. Add the pistachio cream liqueur, vanilla vodka, Benedictine (or Green Chartreuse), and heavy cream.
- Shake vigorously for about 45 seconds, or until the shaker is very cold and the ice has begun to break down.
- Strain the cocktail into the prepared martini glass and serve immediately.
Tips for the Best Pistachio Martini
Shake longer than you think
Because of the cream, a longer shake helps create a smooth and lightly frothy texture.
Use a pistachio liqueur you love
Pistachio cream liqueurs can vary slightly in sweetness and color, but they all bring that signature nutty flavor.
Make it extra festive
Add a small sprinkle of chopped pistachios or a dusting of edible gold on top for a St. Patrick’s Day touch.
A Perfect Girls’ Night Cocktail
This Pistachio Martini will always remind me of that Lucky Charms girls’ night with Samantha and Ruthie—making charm bracelets, sharing food, and laughing over cocktails together.
Sometimes the best recipes come from moments like that, and this one was definitely too good not to share. Cheers to festive cocktails, good friends, and a little St. Patrick’s Day magic.
