Roasted Brussels Sprouts with Cranberries
I love making and eating Brussels sprouts year round but when the holidays approach, I really enjoy roasting them with cranberries, olive oil, salt, pepper and brown sugar. It's the most simple preparation but it makes a perfect holiday side dish for Roast Turkey or ham.

Ingredients Needed For Roasted Brussels Sprouts
- Brussels Sprouts - fresh Brussels sprouts, cut in half lengthwise.
- Cranberries - fresh cranberries, not frozen.
- Brown Sugar - light brown sugar is what I use but dark would work as well.
- Salt & Pepper - kosher salt and ground black pepper for simple seasoning.
- Olive Oil - I never measure! Just drizzle until all of the sprouts are covered.
How to Roast Brussels Sprouts
- Cut off the very tip of the root end of the sprouts and then cut Brussels sprouts in half lengthwise.
- Place sprouts and cranberries on a rimmed baking sheet.
- Drizzle with olive oil and toss with salt, pepper and brown sugar.
- Roast in a 400 degree oven until caramelized and sprouts are fork tender.
Tips for Roasting Brussels Sprouts:
- Cut off the tough brown ends of the sprouts!
- Pull off any yellow or browned leaves from the outside of the sprouts.
- Place sprouts cut side down on the pan before roasting to get the best caramelization.
- Shake the pan or toss gently through the roasting process to prevent sticking.

Roasted Brussels Sprouts with Cranberries
Sweet and tart roasted Brussels sprouts with cranberries make a delicious and beautiful Christmas side dish.
Ingredients
- 1 ½ - 2 pounds Brussels Sprouts
- 6 oz whole fresh cranberries
- ¼ cup light brown sugar
- 1 teaspoon kosher salt
- ½ teaspoon ground pepper
- olive oil
Instructions
- Cut off the very tip of the root end of the sprouts and then cut Brussels sprouts in half lengthwise.
- Place sprouts and cranberries on a rimmed baking sheet.
- Drizzle with olive oil until all of the sprouts are well coated and toss with salt, pepper and brown sugar.
- Roast in a 400 degree oven about 30-35 minutes or until caramelized and sprouts are fork tender.
