Ingredients in Maple Pecan Ice Cream
- Heavy Whipping Cream - this is the base of the ice cream and it's necessary to use heavy whipping cream for the proper consistency.
- Sweetened Condensed Milk - this is the second critical ingredient in the ice cream base which thickens, sweetens and gives the ice cream it's chewy consistency.
- Maple Syrup - use real maple syrup for the perfect flavor.
- Maple Extract - this gives the ice cream that delicious ice cream shop quality maple flavor and can usually be found easily in most grocery stores with the extracts and spices.
- Kosher Salt - just a pinch to balance the sweet flavors.
- Candied Pecans - you can either make your own or buy store bought candied pecans. I find candied pecans in bulk in my grocery stores produce section and they work fabulous for this ice cream. This creates the praline in our ice cream.
How to Make No-Churn Maple Pecan Praline Ice Cream
- In an electric mixer or in a bowl using a hand mixer, beat heaving whipping cream, maple syrup, maple extract and kosher salt, until firm peaks form.
- Fold in the sweetened condensed milk using a spatula until well combined.
- Fold in ½ of the chopped candied pecans reserving the second half.
- Pour ice cream into a loaf pan and sprinkle with the remaining candied pecans.
- Cover with plastic wrap pressing the plastic to the ice cream to prevent ice crystals from forming.
- Freeze overnight until completely firm before serving.
Tips for No-Churn Ice Cream
- Make sure your heavy whipping cream is whipped until firm.
- Gently fold in the sweetened condensed milk but make sure its well blended. You do not want ribbons of condensed milk in the whipped cream.
- Always cover ice cream with plastic wrap, pressing it down to the surface of the ice cream to prevent ice crystals from forming.
- Refrigerate overnight for the firmest ice cream.
- Because this ice cream is made without eggs and has no preservatives, it does tend to melt quickly so scoop right before serving. There is no need to leave it out to thaw before scooping.
You will love how rich and creamy this ice cream is without the need for a custard base or the extra step of an ice cream machine for churning. The candied pecans give that praline crunch and the maple syrup and extract add such a rich and delicious flavor to the entire dessert.
Possible Substitutions
This is one of the few recipes where I will encourage you NOT to substitute any ingredients in the recipe. Because no-churn ice cream is so simple, it really requires the exact ingredients listed. I have personally not tested any substitutions in this ice cream base.
As for flavor combinations, you can change out the maple extract or nuts to anything you like however the result will be another ice cream flavor entirely.
Storing Homemade Ice Cream
You can store no-churn ice cream in the freezer for up to a month in a container with a tight fitting lid to prevent freezer burn. Do not store longterm in the metal loaf pan after the initial freezing.
To be quite honest, a batch of this ice cream never lasts long enough in our house to transfer to any other container however! I sure hope your family enjoys it as much as we do.
