This layered strawberry, blueberry, and coconut Daiquiri is tart, fruity and perfect for a hot summers day. Coconut rum and coconut cream set this drink apart from the classic strawberry daiquiri and the patriotic color combo makes it perfect for serving on the 4th of July.
This frozen red and blue cocktail is the drink to make this Independence Day! Cold and refreshing, this daiquiri pairs well with the smoky flavors of barbecue.
Frozen Strawberry-Blueberry Daiquiri
Frozen strawberry daiquiris are a must make for summer but add in a layer of blueberry and a splash of coconut rum and you have yourself an elevated classic.
I love this drink because the layers can be made ahead of time and frozen for up to a few hours before serving. You will never reach for a pre-made daiquiri mix again when you see how easy this drink is to make from scratch.
Red & Blue Daiquiri Ingredients
- Frozen Strawberries - one bag of frozen strawberries is the base for the red, strawberry layer of daiquiri.
- Frozen Blueberries - like the strawberry layer, you will need one bag of blueberries for the blueberry daiquiri.
- Coconut Rum - classic daiquiris are made with white rum but I like the added coconut flavor of Malibu in this drink. Also, Malibu Rum will add a bit of sweetness to the tart fruit.
- Cream of Coconut - I use Coco Real in all of my cocktails that call for cream of coconut. It has the best flavor!
- Lime Juice - Santa Cruz organics lime juice is perfect for this drink but you can also use fresh squeezed lime juice.
- Ice - to give a nice thick consistency to the daiquiri.
- Simple Syrup - Optional if you enjoy a sweeter daiquiri. I personally leave this out because I like a tart cocktail and find that the coconut rum and cream of coconut add enough sweetness for my taste.
Variations
- Use silver rum instead of coconut rum - if you are not a fan of coconut flavor in drinks, you might enjoy substituting silver rum like Bacardi.
- Skip the coconut cream - again, if coconut isn't your thing, you can omit this ingredient! Real also makes strawberry and blueberry syrups which would both be excellent additions in place of the coconut.
- Add simple syrup - add simple syrup to taste to make the layers sweeter.
- Switch up the fruit - try other varieties of frozen fruit like frozen mango to change the flavor entirely.
- Combine the layers - blend both layers of strawberry and blueberry together to make one big pitcher.
How to Make a Homemade Daiquiri
- Combine frozen strawberries, lime juice, coconut rum, and coconut cream to a blender.
- Blend until smooth and no lumps remain.
- Add ice and blend until thick.
- Place the mixture into the freezer until ready to serve. TIP: I use a large glass Pyrex measuring cup for this.
- Repeat with the blueberry layer.
- To serve, layer strawberry and blueberry daiquiri and garnish with a cherry.
How to Make Ahead
After blending each layer, store in glass measuring cups in the freezer for up to 3 hours before serving. If you freeze too long the daiquiri will be too solid to serve and will need to be re-blended. When it's time to serve, give the layers a good stir with a spoon and pour/scoop into glasses.
To serve, layer strawberry and blueberry daiquiris or give them a pretty swirl by gently stirring with a straw or spoon to combine. Garnish with a cherry, a festive cocktail pick. I recommend sparklers be served on the side, however they do make for a very pretty picture!
A frozen bag of fruit, lime juice, simple syrup or your favorite flavored syrup, rum and ice are all you need to blend up a delicious homemade daiquiri! These fruity, coconutty drinks are not only delicious but so festive to serve on the 4th of July.
Serve with Tomato Caprese Salad, Barbecue Chicken Sliders, and Warm Potato Salad. Happy Independence Day!
