Shrimp Salad Recipe
Grab a fork and a knife, this salad is a full meal and one of my favorites at that!
This delicious shrimp salad can really be made anytime of year but I generally make it during warm weather months! This salad is a meal on it's own but would also be a lovely addition to a brunch table.

Salad Ingredients
- Lettuce - for this salad I love the texture and taste of butter lettuce! It's crisp yet delicate.
- Apple - any variety of crisp apple will work for this salad.
- Shrimp - take a shortcut from the grocery store and buy precooked peeled shrimp from the seafood department.
- Radishes - thinly sliced radishes add crunch and spice to the salad plus so much flavor.
- Cucumber- for freshness and crunch.
- Avocado- add another layer of creamy goodness.
- Sugar Snap Peas - cut in half lengthwise have such a pretty look in the salad and add a sweet crunchy element.
- Chive - for garnish and added flavor!
Dressing Ingredients
This salad dressing is a cross between a classic Green Goddess with a hit of Caesar. It's herbacious, creamy and you will want to dip every veggie in your fridge into it!
- Anchovy Paste - I know this ingredient is polarizing but it makes a huge difference in the flavor of this dressing! Think classic Caesar mixed with Green Goddess.
- Garlic - just one clove of fresh garlic adds a ton of flavor to this dressing!
- Sour Cream - I love adding sour cream to salad dressing to make it creamy and lighter than a dressing made with just mayonnaise.
- Mayonnaise - Mayo combined with sour cream makes for the smooth and creamy base.
- Parsley - Flat leaf parsley gives the dressing a beautiful green color and the classic Green Goddess flavor.
- Dill - Fresh dill is primary herb flavor in this dressing!
- Chives - For a subtle fresh onion flavor.
- Lemon - Lemon juice cuts the rich flavor of the mayonnaise.
- Kosher Salt & Black Pepper - Season to taste.
Instructions
- Wash and tear butter lettuce into a large serving bowl.
- Slice apples, radishes, avocado, and sugar snap peas and scatter on top of the lettuce.
- Add the cooked shrimp.
- In a blender, combine all of the dressing ingredients and blend until smooth.
- Drizzle a light amount of dressing over the salad. Serve more on the side.
- Garnish with chopped chives.
TIP: This dressing makes more than you will need for the salad but you will LOVE having extra for dipping veggies in or even spreading on sandwiches.

Shrimp Salad with a delicious herbed green goddess dress and fresh crisp vegetables make the perfect summer salad.
Ingredients
- 1 head butter leaf lettuce, torn
- 1 apple cored, cut in half and sliced thin
- 1 lb cooked shrimp
- 3 radishes, thinly sliced
- 1 English cucumber, thinly sliced
- 1 ripe avocado, sliced
- chopped chive for garnish
- FOR THE DRESSING:
- 2 teaspoons anchovy paste
- 1 clove garlic
- ½ cup sour cream
- ½ cup mayonnaise
- ½ cup chopped fresh flat leaf parsley
- ¼ cup chopped fresh dill
- ¼ cup chopped fresh chives
- juice of 1 lemon
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
